umbrela proiectului \u201eAmintiri austoase\u201d, s-a derulat \u00een spa\u021biile Conacului din Ceptura, Prahova \u0219i a fost coordonat de Chef Daniela Graura \u0219i Liviu Lambrino.<\/p>\n<h2 id=\"chapter-0\">\u201eM\u00e2ncarea este cel mai simplu liant\u201d<\/h2>\n<p id=\"p-2\">Ideea atelierului de g\u0103tit \u201eMica Unire \u00een bucate\u201d a venit natural, dup\u0103 ani de proiecte derulate de echipa \u201eAmintiri gustoase\u201d \u00een toat\u0103 \u0219ara, pove\u0219te Silvia Teodorescu, coordonatorul proiectului.<\/p>\n<blockquote readability=\"18\">\n<p id=\"p-3\">\u201eDe ani de zile am tot v\u0103zut \u00een \u021bar\u0103 c\u0103 oamenii se deschid \u0219i sunt mai dispu\u0219i s\u0103 vorbeasc\u0103 unul cu altul dup\u0103 ce m\u0103n\u00e2nc\u0103 \u00eempreun\u0103 \u0219i se cunosc \u00eentr-un mod mai intim, mai uman. \u0218i, acum c\u0103 suntem \u00eentr-o perioad\u0103 \u00een care apare segregarea \u0219i tot felul de extremisme, este clar c\u0103 m\u00e2ncarea este cel mai simplu liant. \u0218i nu puteam s\u0103 nu s\u0103rb\u0103torim Mica Unire, to\u021bi rom\u00e2nii o s\u0103rb\u0103toresc, fiecare cum, Teodorescu.<\/p>\n<\/blockquote>\n<p id=\"p-4\">Prepararea meniului \u2013 &nbsp;care \u00ee\u021bi las\u0103 gura ap\u0103 doar c\u00e2nd \u00eel auzi detaliat- era, \u00een timpul conversa\u021biei cu Silvia, \u00een plin\u0103 desf\u0103\u0219urare, cu cele \u0219apte echipe \u00eemp\u0103r\u021bite la fiecare mas\u0103 de lucru, iar fiecare fel propus aduce c\u00e2te ceva specific din regiunile istorice ale Rom\u00e2niei.<\/p>\n<p id=\"p-5\">Primul fel este un unt de cas\u0103, cu p\u0103ine pr\u0103jit\u0103 la jar \u0219i cu scalii de trufe.<\/p>\n<blockquote readability=\"22\">\n<p id=\"p-6\">\u201eAcest meniu este cumva g\u00e2ndit universal: dac\u0103 untul de cas\u0103 este specific, s\u0103 zicem, \u021a\u0103rii Dornelor, pentru c\u0103 acolo e \u0219i patria sm\u00e2nt\u00e2nii, a untului, al lactatelor de fermenta\u021bie, pP\u00e2n\u0103 la urm\u0103, cu to\u021bii am \u00eenceput s\u0103-l iubim, c\u0103 \u0219i-n Ardeal g\u0103se\u0219ti untul de cas\u0103. \u0218i atunci cumva este un unt care \u00ee\u021bi spune mai mult despre zonele care sunt bogate \u00een lapte, \u00een p\u0103\u0219uni, \u00een cireze de de vac\u0103, pentru c\u0103 se face din lapte de vac\u0103, din sm\u00e2nt\u00e2n\u0103 de vac\u0103 \u0219i avem trufe rom\u00e2ne\u0219ti, pe care le radem peste untul de cas\u0103\u201d, explic\u0103 Silvia.<\/p>\n<\/blockquote>\n<p id=\"p-7\">Astfel, acest aparent simplu unt de cas\u0103 une\u0219te zonele bogate \u00een br\u00e2nzeturi \u0219i lactate, adic\u0103 \u021aara Dornelor, Bucovina \u0219i Ardealul, cu p\u00e2inea la jar, care vine din Secuime, p\u00e2inea cu cartofi pe care o g\u0103se\u0219ti doar \u00een Harghita \u0219i Covasna, care a fost adus\u0103 la eveniment de invita\u021bii din Odorheiu Secuiesc, \u0219i trufele negre, &nbsp;care sunt originare din Prahova, jude\u021bul \u2013 gazd\u0103.<\/p>\n<p id=\"p-8\">Un alt fel g\u0103tit s\u00e2mb\u0103t\u0103 este iar aparent banal, &nbsp;\u201eMBS\u201d \u2013 M\u0103m\u0103lig\u0103 cu Br\u0103nz\u0103 \u0219i Sm\u00e2nt\u00e2n\u0103, m\u00e2ncarea anilor de studen\u021bie cu pu\u021bini bani \u00een buzunar.<\/p>\n<p id=\"p-9\">\u201eAcest MBS reune\u0219te br\u00e2nzeturi maturate din zona Munteniei, br\u00e2nz\u0103 de capr\u0103, br\u00e2nz\u0103 de vac\u0103 maturat\u0103 cu trufe, m\u0103m\u0103lig\u0103 cu m\u0103lai f\u0103cut la moar\u0103, deci nu are gri\u0219, tradi\u021bionale le ou\u0103, dar \u0219i aici, repet, venim cu trufe \u0219i cu sm\u00e2nt\u00e2n\u0103 bun\u0103\u201d, poveste\u0219te coordonatoarea proiectului.<\/p>\n<p id=\"p-10\">Un preparat foarte l\u0103udat a fost \u0219i unul specific din \u021aara Dornelor, o ciorb\u0103 cioc\u0103ne\u0219tean\u0103, reinterpretat\u0103 cu p\u0103str\u0103v afumat acrit\u0103 cu gogo\u0219ar murat.<\/p>\n<p id=\"p-11\">Nu au lipsit nici sarmalele \u201ede uniune na\u021bional\u0103\u201d, cu foi de varz\u0103 \u0219i carne de porc \u0219i \u00een frunze de vi\u021b\u0103, cu amestec se toc\u0103tur\u0103 de piept de ra\u021b\u0103 \u0219i vit\u0103. \u201e\u0218i sosul lor, c\u0103 le unim, provine din samurzac, sosul dobrogean cu ro\u0219ii \u0219i mujdei, din Dobrogea, se extrage un pic din usturoi \u0219i se face un sos din reduc\u021bie de ro\u0219ii cu provenien\u021b\u0103 dobrogean\u0103 peste aceste dou\u0103 tipuri de sarmale\u201d, explic\u0103 Silvia.<\/p>\n<p id=\"p-12\">Iar la finalul mesei ajunge celebrul papana\u0219, care este g\u0103tit \u00een numeroase feluri \u00een Rom\u00e2nia, fier\u021bi sau pr\u0103ji\u021bi, de diferite dimensiuni.<\/p>\n<p id=\"p-13\">\u201eNoi vom face iar un papana\u0219 de uniune na\u021bional\u0103, pentru c\u0103 avem papanajul tradi\u021bional, care se face cu br\u00e2nz\u0103 de vaci \u00een compozi\u021bie, \u00een gogo\u0219ica pe care o pr\u0103je\u0219ti, avem sm\u00e2nt\u00e2n\u0103 din \u021aara Dornelor, dup\u0103 aceea avem dulcea\u021b\u0103 de afine sau de vi\u0219ine din zona V\u00e2lcea, f\u0103cut\u0103 din livezi de produc\u0103tor rom\u00e2n \u0219i la final venim cu ceea se serve\u0219te la Cop\u0219a Mic\u0103, o reduc\u021bie, un fel de piure de mere.
